BBQ BEEF SANDWICHES W/ CREAMY LIME COLESLAW

1 Tbsp vegetable oil

3lb chuck roast

2 bottles Humble and Frank BIG BAY BBQ SAUCE AND MARINADE

1 cup beef broth

1 bag pre-shredded coleslaw mix

1/4 cup thinly sliced green onions

1/2 cup real mayonnaise

2 Tbsp fresh lime juice

6 Portuguese-style buns, split

Butter

2 cloves garlic

Sliced dill pickles

Heat oven to 275°F.

Heat the olive oil in a Dutch oven over medium-high heat. 

Season the roast with salt and pepper and brown on all sides, about 15 minutes total. 

Pour one bottle of BIG BAY BBQ SAUCE over the roast, along with the beef broth. Turn the roast so it is well coated. 

Cover the Dutch oven with a lid and place in the oven until tender and the meat easily pulls apart, 2.5 - 3 hours. Transfer the roast to a large cutting board and using two forks, shred the roast. Discard the liquid from the Dutch oven (or save for another use).

Place the beef in a large saucepan and pour over the second bottle of BIG BAY BBQ SAUCE. Season with pepper and heat gently over low heat until ready to eat.

Toss the prepared coleslaw with the green onions, mayonnaise, and lime juice. Season with salt and pepper.

Set the oven to broil. Butter each cut side of the buns and broil until toasty brown, about 3 minutes. Immediately rub each bun with a garlic clove. 

Set the table with the buns, the beef, the coleslaw and sliced pickles and allow your guests to build their own sandwich!
