BBQ Lentil Sloppy Joes

1 cup brown or green lentils
2 Tbsp olive oil
1 small onion, finely minced
1 rib celery, finely minced
1 small carrot, finely minced
1 small green pepper, finely minced
2 cloves garlic, finely minced
1 tsp smoked paprika
½ cup vegetable broth
1 bottle Humble and Frank BIG DIPPER BBQ SAUCE AND MARINADE
6 toasted hamburger buns
Favorite toppings such as avocado slices, pickled onions, red cabbage or fresh greens

Bring a large pot of salted water to a boil and add lentils. Simmer until tender, 15-45 minutes, depending on the type of lentil, or follow package directions. Drain well and rinse the pot.

Heat the oil in the pot over medium heat. Add the onions, celery, carrot and green pepper and cook until the vegetables are tender, about 15 minutes. Stir in the garlic and paprika. Cook for another 2 minutes, then add the cooked lentils, the vegetable broth and BIG DIPPER BBQ SAUCE. Bring to a boil, then reduce to a simmer, and reduce the liquid in the pot so the mixture is good and thick, 10-15 minutes. Let sit for 10 minutes, uncovered.

Serve with fresh toasted buns and your favorite toppings.
