BBQ BEEF SANDWICHES
WITH CREAMY LIME COLESLAW
ingredients | Serves 6
1 Tbsp vegetable oil
3lb chuck roast
2 bottles Humble and Frank BIG DIPPER BBQ SAUCE AND MARINADE
1 cup beef broth
1 bag pre-shredded coleslaw mix
1/4 cup thinly sliced green onions
1/2 cup real mayonnaise
2 Tbsp fresh lime juice
6 Portuguese-style buns, split
2 cloves garlic
Sliced dill pickles
Heat oven to 275°F.
Heat the olive oil in a Dutch oven over medium-high heat.
Season the roast with salt and pepper and brown on all sides, about 15 minutes total.
Pour one bottle of BIG DIPPER BBQ SAUCE over the roast, along with the beef broth. Turn the roast so it is well coated.
Cover the Dutch oven with a lid and place in the oven until tender and the meat easily pulls apart, 2 1/2 – 3 hours. Transfer the roast to a large cutting board and using two forks, shred the roast. Discard the liquid from the Dutch oven (or save for another use).
