4 boneless, skinless chicken breasts
½ cup Humble & Frank HAWAIIAN SESAME SOY SAUCE & MARINADE
1 cup purple or brown rice
1 ¼ cups chicken stock
¾ cup canned coconut milk
2 Tbsp sesame seeds
In a large shallow dish, marinate chicken in HAWAIIAN SESAME SOY SAUCE for at least 30 minutes and up to 2 hours.
In a large pot over high heat, combine rice, chicken stock, coconut milk and a pinch of salt. Bring to a boil. Stir gently, then lower heat to simmer, cover, and cook for 30-45 minutes (depending on rice package directions).
In the meantime, heat a grill or large cast iron pan to medium and grill or fry chicken until cooked through, 10-20 minutes, depending on thickness of breasts.
Serve chicken with rice and sesame seeds and a cucumber herb salad lightly dressed with a rice wine vinegar and sesame oil vinaigrette.
