Heat oven to 450°F. Line a rimmed sheet pan with parchment paper and place salmon fillets on top. Season with salt and pepper and slather with a few tablespoons of HAWAIIAN SESAME SOY SAUCE.
Roast until salmon is just cooked through, 12-15 minutes. Pull salmon apart with a fork, into large chunks.
In the meantime, mix tahini with ¼ cup HAWAIIAN SESAME SOY SAUCE and one tablespoon hot water. Set aside.
Set lettuce leaves on a serving platter. Fill with carrots, cucumber, salmon, cilantro, scallions and sesame seeds. Drizzle with sauce and serve.
