Spring Roll Shrimp Salad

9 oz rice vermicelli noodles
Humble & Frank HAWAIIAN SESAME SOY SAUCE AND MARINADE
1 lb large shrimp, peeled
4 scallions, thinly sliced on the diagonal
½ cup fresh cilantro leaves
1 large mango, sliced into thin strips
1 large avocado, thinly sliced
Toasted sesame seeds
Lime wedges to serve

Cook rice noodles according to package. Rinse and keep cool.

Toss the shrimp in 2 Tbsp HAWAIIAN SESAME SOY SAUCE and let marinate for 30 minutes.

Bring 2 cups of water to a simmer and add the shrimp, sauce and all. Cover and let cook until shrimp is cooked through, about 2 minutes. Remove from heat and transfer shrimp to a large bowl with a slotted spoon.

Toss together the prepared noodles and the shrimp, scallions and cilantro. Divide amongst 4 bowls. Top with mango and avocado and drizzle with HAWAIIAN SESAME SOY SAUCE. Top with sesame seeds to taste and serve with lime wedges.
